Information about the course

The Advanced Chef's Diploma is a one-year full time course with 21 hours per week in College. This course is suitable for students who hold an NVQ Level 2 in Food Preparation and Cooking or equivalent. Mature applicants with relevant catering experience are welcome to apply.

The main aim/objective is to achieve City & Guilds NVQ Level 3 in Professional Cookery.

The course includes work experience, one day per week for 20 weeks, which may or may not be paid. This will be set in an NVQ Level 3 standard establishment as specified and agreed with the course tutor.

Course content

NVQ Units covered:

Prepare, cook and finish complex fish dishes.

Prepare, cook and finish complex meat and poultry dishes.

Prepare, cook and finish complex cold sauces and dressings.

Prepare, cook and finish complex vegetable dishes.

Prepare, cook and finish complex soups.

Prepare, cook and present complex cold products.

Prepare, finish and present canapes and cocktail products.

Establish and develop positive working relationships in hospitality.

Maintain the health, safety and security of the working environment.

Maintain food safety when storing, preparing and cooking food.

Contribute to the development and introduction of recipes and menus.

Prepare, cook and finish healthier dishes.

Cook and finish complex hot sauces.

Additionality

There is also the opportunity to acquire related qualification such as:
NCFE Cake Decoration and Intermediate CIEH Food Safety.

Catering uniform and equipment are essential and successful applications will be sent an order form. The approximate total cost for last year was £50 for students who have taken previous courses and therefore already have some of the essential items.

Progression

Successful completion of this course can also lead to further study: The Higher National Diploma in Hospitality Management.

Employment opportunities:
Commis Chef, Demi Chef de Partie in a Hotel/Restaurant or Contract Catering.
