2. Course description To take your cooking skills to the next level and enhance your employability as a professional chef, this Level 3 Diploma will provide you with further expertise and abilities in the kitchen environment. You'll learn a number of advanced preparation and cooking techniques to really deepen your level of knowledge around food. You'll be creating dishes using a variety of vegetables, meat, poultry and fish - alongside finer ingredients like game and shellfish - and be delving even deeper into food safety and supervision issues in the catering industry. As part of the course, you'll also be able to choose optional units to learn some skills that really interest you. This could be cooking and finishing dressings, creating cold sauces from scratch, or even baking cakes, biscuits and petit fours!

Entry requirements In order to make sure you're comfortable learning the advanced skills on this course, you'll need to already have a Level 2 Diploma in Professional Cookery, or at least 2 or 3 years experience working in a professional environment in hotels and restaurants. You'll also need to have GCSEs at grade A - C in Maths and English Language, or a level 1/2 qualification in literacy and numeracy. 4. Equipment required No equipment required 5. Assessment method To demonstrate you have picked up the advanced skills and techniques learnt on this course, a large portion of your assessment will be centred on practical tasks in a real working environment. You'll also need to complete some written questions and portfolio work in the classroom.
