Description
The aim of the course is to provide you as a food handler with the knowledge to produce safe food both at work and at home and it is designed to do this without any previous knowledge of food hygiene.
Course Content
This qualification covers:
- Food hygiene
- Micro-organisms
- Food poisoning how and why
- Temperature and micro-organisms
- Legislation
- Contamination and cross contamination
- Common food hazards - microbiological, physical and chemical
- Personal standards
- Storage and temperature control
- Premises design and construction
- Cleaning and disinfection
- Pest control
- Waste disposal
- Hazard analysis and HACCP
Where a course is aimed towards an assessment/examination, it is expected that all students will enter for the qualification.
Method of Assessment
Assessment is through the completion of activities in the workbook which has been written in an easy to read format and a 30 multiple choice question exam.
Progression
Level 3 Award in Food Safety.
