APPRENTICESHIP FOOD PREPARATION AND COOKING
Who is this course for?
Good cooking is important - we all enjoy eating good food! This course aims to train you as a chef or cook. A cook or chef plans, prepares and cooks food which looks good, tastes good and is safe to eat. Chefs usually work in hotels or restaurants. Cooks are more likely to work in hospitals, schools, work canteens, cafes or fast-food shops. As a chef, you must be able to lead and motivate a team, have good personal hygiene and produce meals on time. You must produce high quality food and present it effectively, as well as observing food hygiene regulations.
How long is this course for?
1-4 years depending on how many levels you want to progress through
What will I study?
- Work with people as part of a team
- Maintain and handle knives
- Maintain hygiene in food storage, preparation and cooking
- Prepare and cook soups, sauces and vegetables
- Prepare and cook fish, poultry and meat dishes
- Prepare basic pasta dishes
- Hot and cold desserts
- Prepare and cook basic pastry dishes
- Clean food production areas, equipment and materials
- Essential Skills in Communication, Application of Number and Information Technology. Applicants who have achieved GCSE English, Mathematics or IT at grades A-C, will be exempt from the equivalent essential skill.
How will I be assessed?
Assessment will be an on going process. You may be assessed through practical demonstration, oral questioning, assignment/project work, written tests and simulation.
