This course is for people who want to concentrate on specialised patisserie and bakery skills and wish to pursue a career in pastry work. We concentrate on modern and classical techniques used in the industry.
It will provide the candidate with the working knowledge and skills required to produce basis items, dishes, show pieces, and menus that are relevant to the pastry section of the kitchen.
Your training will take place in a pastry laboratory and in some of our restaurant partners' kitchens. This is a full time course that will run for 6 months.

About this course

- The student will learn the science of what happens at various stages of the cooking and cooling process.
- The student will learn sugar confectionery creams such as creme patisserie (custard) in a variety of flavours, chantilly cream and whipped ganaches.
- The student will learn how to make and cook caramels and chocolate sauces.
- The student will; learn how to make and cook mousseline cream in a variety of flavours.
- The student will learn how to make and cook curds in a variety of different flavours.
- The student will learn many more basic preparations.

Age Requirements: Students must be a minimum of 16 years of age to enroll in cooking classes. For those younger than 18 will need a parent or guardian as a guarantor.

Level of English Language: If English is not your first language, you must demonstrate an intermediate English language level.

Course programme

In this course, students study the basic mise en place (preparation) for stations and departments in the pastry kitchen. Students study the science of what happens at various stages of the cooking and cooling processes. Students learn how to make sugar confectionery creams, such as creme patisserie (custard) in a variety of flavours, chantilly cream, whipped ganches, caramels, chocolate sauces, curds, mousseline creams, almond cream and many more.
