Course Aims:
The course is designed for anyone who is new to working in a commercial kitchen environment, including:

Small Hotels plus any other location where food is prepared and served.

Course Content:
The BIIAB Level 1 Essentials of Catering Award (ECA) covers 9 key subject areas:
Personal hygiene and work clothing
Basic knife skills
Storage methods and temperature recording of foods
Food preparation
Sandwich making
Food presentation
Waste disposal methods
The use and cleaning of machinery and equipment
Cleaning of workstations, walls and floors.

Progression:
NVQ Level 2 Patisserie
NVQ Level 2 Professional Cookery

Notes:

Uniform requirements:-

Safety shoes or sturdy black leather full fronted shoes
Long hair to be tied back and hairnet purchased from the catering office for 20p
No makeup, jewellery or nail varnish
College will supply protective hats and coats

Other Costs:
Students over 19 years will be required to pay exam and registration fees for all qualifications. Course fees may also be payable depending on personal circumstance and employment status. Please seek advice from Student Services.
