Content
Students can choose to study Food Preparation and Cooking NVQ 1 and/ or Serving Food and Drink NVQ 1. This introductory course is designed to help students to bridge the gap between school and a career in catering and possibly studying at NVQ level 2. Practical skills will be gained in the commercial kitchens and the public restaurant and diner.
Cooking units on the course will deal with:
Hygiene, Working with Others, Health and Safety, Preparing Fruit and Salads, Preparing and cooking Vegetables, and preparing and cooking fish, meat and poultry.
Serving Food and Drinks units on the course can deal with:
Preparing Dining Areas, Serving Customers, Customer Care, Dealing with Payments, Providing a vended drinks service and other service techniques.
Key Skills will also form part of your final qualifications
Assessment
Practical Observation, is used as an assessment method of practical tasks. The course is mainly practical in nature but includes theory sessions, and students are required to complete written questions and answers as well as short exam style papers set by the awarding body.
Progression
This course will prepare you for entry into employment at operative level or for further study such as the Food Preparation and Service Diploma at Level 2.
Work Experience
The Catering area prides itself on its high standards shown in the public restaurant. It has been twinned with the Catering School in Poitiers, France for 10 years and operates an annual exchange programme. Students also compete in regional and national competitions and suitable work experience is arranged.
