What will I study?
  • How front of house works effectively alongside a professional kitchen
  • Mostly ‘hands on’ practical work, developing your chopping and slicing skills with kitchen knives, using specialist utensils and learning about equipment in a modern kitchen
  • Preparation and cooking of food for sale in the College’s Deli Shop with the chance to work in the College’s Brasserie Restaurant - a busy restaurant style service with great food and you will also have the opportunity to dine there too
  • Food and beverage skills, which for some learners, may be their eventual career pathway
  • Employability and personal development skills which will help you with dealing with daily problems, developing yourself and preparing for work
  • Essential Skills for Progression in English and Maths to support your basic education and career development

How is the course taught?

  • The majority of your work will be carried out in the 2 fully equipped commercial kitchens, Brasserie Restaurant and Bar at the College’s High Street Campus
