Caroline began her cooking career in her and her husbands Wine Bar & Restaurant over 15 years ago. When Caroline first stepped into a professional kitchen it was to fill in for a chef who fell ill, "that time was such a steep learning curve, I had to be calm and confident to produce restaurant quality food, once I got into my stride I loved it and was bowled over by the huge high you get from cooking for people".

G's(as she is known) passion for food started many years ago when she went to Winkfield, a Cordon Bleu Cookery School. Since then her cooking experiences have ranged from Location Catering, running her own Catering Company which specialised in Weddings, Canape parties, shoot lunches and corporate functions. With her enthusiastic approach to cooking she is able to inspire and educate her students while giving them the confidence they need to cook for themselves and others.
Course programme
Course Description
This Course will involve a more in depth tuition. We will teach you to create delicious meals to feed your hungry tired guests. Our aim is to teach you to be able to 'WOW' your guests with tasty stylish dishes as well as satisfy their palates.
We will get you to plan your days efficiently, a Chalet season has so much to do with organisation, this will be an area we will focus on. On day four of your course we will set you a challenge. To work out a three course dinner, or two courses and canapes, to go and buy the ingredients you will need, cook the food to the stage where you can then leave it, exactly as if you were in a ski resort. We will then get you to finish the meal for us all to taste and discuss with you.
Our aim is to prepare you for the need to be organised as well as give you confidence to help you get there.
A few examples of the dishes you will learn to cook;
- Smoked Haddock Chowder
- Fillet of Pork with a Sage and Onion crust
- Individual Potato Dauphinoise
- Individual Bread and Butter Pudding with Prunes and Armagnac
We will also show you how to plan weekly menu's to a budget, select wine to compliment food, manage your time efficiently to enable you to satisfy your guests requirements and enjoy your own skiing and down time

With the Chalet courses, we will be inviting in local cheese producers and wine merchants to help our students gain more knowledge.
