· The legal requirement for businesses to adopt a food safety management procedure based on the HACCP principles (Hazard Analysis and Critical Content Point)
· The 7 basic principles of the ACCP system and how these can be adapted to a food safety management system in a catering enterprise
· The controls that need to be put in place to ensure the safety of food and how these should be monitored
