This course is designed for all those working in food businesses at supervisory level. This includes 'traditional 'supervisors and team leaders and also includes anyone who needs a broad understanding of food hygiene as part of their work
Description
Changes in legislation effective from January 2006 have placed greater onus and accountability on anyone in the food business with supervisory responsibility. It is therefore vital they are equipped with both the knowledge and confidence to do their job effectively.

This course provides an opportunity to look more deeply into food safety from a supervisory perspective and successful candidates will be able to help their organisation whatever the size or activity in improving the food safety culture.
Course Content
· Legislation
· Supervisory management
· Temperature control (chilling, cooking)
· Cleaning
· Contamination control
· Applying and monitoring good hygiene practices
· Implementing good food safety procedures
· Contributing to the safety training of others
Where a course is aimed towards an assessment/examination, it is expected that all students will enter for the qualification.
Method of Assessment
2 hour multiple choice test of 60 questions.

Level 4 Advanced Food Safety.
