The course is suitable for those wishing to work as chefs or who want to pursue a career in Food and Drink Service.
The course covers units such as health and safety and food safety plus food and drink services. Other units and topics included are:
· Prepare and cook food by boiling, poaching, steaming, sewing braising, baking, roasting, grilling, deep and shallow frying
· Cold food preparation
· Prepare and cook stocks, soups and sauces
· Prepare and cook fruit and vegetables
· Prepare and cook meat and offal
· Prepare and cook poultry, fish and shellfish
· Cook rice, pasta, grains and egg dishes
