Equipment required • Apron, tea towel, washing up sponge, container to take food home in an oven proof dish/casserole • 4 large skinless chicken breasts/quorn/cod loin fillet • 30 ml olive oil • 1 large onion • 1 large can chopped tomato • 150ml red wine • Chicken/vegetable stock cube (reduced salt if possible) • 2 garlic cloves • Few sprigs fresh rosemary • 4 large Portobello mushrooms (or equivalent weight in any other mushroom) • Salt and black pepper • Packet whole wheat pasta • 1 packet frozen raspberries • 1 tub fat free vanilla yogurt • 150g of no added sugar whole-wheat natural muesli (all large supermarkets stock this) 5. Assessment method Practical demonstrations, you will follow the strict code of hygiene expected of a food handler, you will be introduced to a variety of cooking methods and safe food preparation skills.
