Ashburton Cookery School's Cookery Diploma is a fastmoving, 20 day, immersion cookery course that takes students through a broad syllabus of fundamental techniques covering all areas of cooking.
The Diploma course is designed for those with ambitions of entering the catering industry or for serious cooks who want to raise their cooking to a higher standard. We cover all the skills that are required in a professional catering environment. Over a four-week period, we train you to the standard of cooking expected at NVQ Level 3.
In the final week you will spend two days in the kitchen of one of the regions top restaurants or Gastro-Pubs. There is also a site visit or alternatively a group consultation with one of our local producers.
With a maximum of 10 students the teaching is as hands-on as possible, with time also set aside for theory in all subject areas as well as daily lesson sheets and recipes that build into a comprehensive course folder.

- Advanced bread-making

Week 4
- Making 3 course dinner and canapes under assessment
- 2 days work placement
