This will be very much a 'hands on' class, in which you should gain confidence to tackle the more difficult but in fact very straightforward aspects of cooking, such as part- boning meat and fish. You will cook dishes such as hot and cold soufflés, mousse and mayonnaise. Experience is not necessary, but enthusiasm to learn will help. Limited to 10 students.
