2. Course description Join us on an exploration of the finest produce and local dishes available on the shores of the Mediterranean! Learn how to cook a variety of authentic and delicious dishes from Spain, France and Italy, and onwards to the Middle East and North Africa. Dishes will include handmade flatbreads, meat, seafood and vegetable dishes. All dishes can be adapted to suit any specific diet.

3. Entry requirements This course is suitable for all abilities, from those with basic cookery skills to those with more expertise in the kitchen. Less experienced or less confident cooks may be encouraged to limit the number of dishes they prepare.This course is suitable for vegetarians. Although some of the planned recipes may include meat or fish, the tutor will always be able to suggest alternative ingredients. N.B. Please do let us know if you have an allergy or food intolerance when you enrol on any one of our cookery courses. This information is important and will ensure the tutor can plan alternative ingredients or recipes where necessary.We welcome learners with additional needs and disabilities. Please let staff know if you require any extra support when you enrol and they will arrange for a member of the Supported Learning Team to contact you to discuss your support needs. Equipment required Recipes/ingredients list will be sent 1 week prior to the start of the first class.Please bring an apron, tea-towels and all ingredients as listed in the recipes sent to you, also some suitable containers to take food home in.It is important to wear clothes and footwear suitable for a busy, hot kitchen. 5.
