2. Course description Would you like to gain more confidence in the kitchen? Make your own delicious meals, and impress your family and friends with your cuisine? Then this course is for you!The aim of this course is for you to learn a range of basic cooking skills, enabling you to produce simple but tasty and nutritious dishes from scratch. The main goal is for you to develop confidence in a variety of cooking skills, to recognise ingredients that work together and to master the use of kitchen equipment, including knife handling. You will also learn how to carry out best hygienic practices and understand food safety hazards that may occur in a kitchen.The course is largely student-led, with the dishes taught being chosen with the learners' wishes and tastes in mind, with the goals moving towards areas that are decided upon democratically.

3. Entry requirements No skills or prior knowledge are required before starting the course. The course is suitable for the complete beginner or for those who wish to broaden their skills in the kitchen. Less experienced or less confident cooks may be encouraged to limit the number of dishes they prepare.This course is suitable for vegetarians. Although some of the planned recipes will include meat, the tutor will always be able to suggest alternative ingredients.N.B. Please do let us know if you have an allergy or food intolerance when you enrol on any one of our cookery courses. This information is important and will ensure the tutor can plan alternative ingredients or recipes where necessary.We welcome learners with additional needs and disabilities. Please let staff know if you require any extra support when you enrol and they will arrange for a member of the Supported Learning Team to contact you to discuss your support needs. Equipment required The ingredients list will be sent 1 week prior to the start of the first lesson.Please bring an apron, tea-towels and all ingredients as listed in the recipes sent to you, also some suitable containers to take food home in.It is important to wear clothes and footwear suitable for a busy, hot kitchen. 5.
