Course programme
There are no formal entry requirements although you will need to show a strong commitment to pursuing a career in food preparation and cookery and have literacy and numeracy skills to Level 1 or above. All applicants for will be required to attend an interview and assessment. If you are at all unsure as to your suitability for the course we will discuss each individual at an arranged interview. Please contact the college and the programme manager will be happy to discuss the course and its content with you.
You will learn the Principles of food preparation and cooking, become skilled in such important skills as frying, baking, grilling, poaching, steaming and griddling and you will learn how to prepare and cook a variety of interesting and exciting dishes including meats, fish, sauces, soups, vegetables, salads, pastries, and hot and cold desserts. You will also undertake Functional skills, ERR, CIEH food safety award, Sustainability in Professional Kitchens, Introduction into foraging and wild food, Allergen awareness, safety and hygiene in the kitchen and the importance of teamwork in cooking for our busy restaurant.
Upon successful completion of this course, you can enter employment as a Chef or you can continue onto a Level 3 programme at the college.
