This stimulating, leisure cookery course will develop your culinary flair and provide you with a range of curry recipes from around the world. The course allows participants to develop their culinary skills by experimenting with a variety of spices and local produce to prepare and cook mouth-watering curry dishes.

Curry is a world wide favourite and on this stimulating three week, evening cookery course you will learn to recreate a variety of global curries.

From seductively spiced curries of India, the fragrant curries of the Caribbean, the creamy coconut curries of Thailand and fruity African curry. This class will equip you with the knowledge to create spice blends, curry pastes and create delicious curries from around the world.

You will develop culinary flair and will complete the course with a range of curry recipes following experimentation with a variety of spices and local produce after preparing and cooking a selection of mouth-watering dishes.

Course programme

This cookery course will allow you to explore various ingredients, develop skills in curry cuisine and encourage you to develop your own creative culinary ideas, whilst using blended spices and quality ingredients.

Take a culinary journey around some of the world's finest curry hotspots as you learn to make dishes using authentic but easily available ingredients. You will learn how to select and use spices and make curry pastes, marinades and accompaniments.

The course will provide you with new skills in culinary techniques and present you with a range of recipes for Main courses, side dishes and Starters. Once attending the course, in collaboration with the chef, there is the opportunity for you to contribute dish ideas to be made throughout the course.

Some examples of dishes that you may make includes:

  • Goan lamb curry with spiced Pilau rice
  • Thai King prawn curry
  • Butter chicken, onion bhajis
  • Martinique coconut chicken curry

The selection of ingredients used to produce these dishes will vary from those used daily to specialist products, including a wide range of spices, meat, fish, vegetables, sauces, fruit, nuts and pulses.

Participants will explore the tools and skills required for the selection of ingredients, the methods required in the preparation of food, the cooking and finishing of ingredients to form a range of curry dishes.

Course participants will be able to develop their awareness of Health and Safety relating to the preparation of food, food safety awareness, practical knife skills and stove control, whilst learning logical and coherent methods for producing interesting, unique Indian cuisine.
