Course programme

Students will be expected to take part in group discussions and exercises and complete a Workbook to prove competence.

Summary: The course covers what is required of a food handler and the legal and moral obligations under the food safety acts. It includes the symptoms, causes and sources of food poisoning and food-borne diseases, understanding the requirements for bacterial growth and how to control the spread of bacterial contamination. Students will understand the part that personal hygiene plays in bacterial control, the importance of proper cleaning, and how good design and equipment will help.

Recommended refresher after: 1 year
