Course Content: This course includes the Principles of working in Food Manufacture and Workplace food safety. Candidates can work at three levels: Award, Certificate and Diploma, to achieve the Diploma all of the following units must be achieved.
Mandatory Unit:
· Principles of working in food manufacture and workplace food safety. Assessed by an externally set short answer examination and assignments for each outcome.
Additional units:
· Process advanced craft fermented dough products to include; sweet fermented goods such as baba and savarin, hotplate items, stollen, seasonal breads and display continental breads.
· Prove and bake advanced craft fermented dough products; demonstrate your ability to research, prove and bake a whole range of fermented products.
· Produce advanced craft pastry products to include biscuits, pastries and advanced choux and savoury pastry products.
· Bake advanced craft flour confectionery to demonstrate your ability to research, prove and bake a whole range of confectionery products.
Special Features: You will have the opportunity to develop your craft skills to a very high level, while at the same time gaining the necessary underpinning knowledge.
Learners will also be encouraged to participate in competitions and external awards.
Progression: You will be able to progress to higher education or employment.
