Food Preparation & Cooking NVQ Level 2
An NVQ is a nationally recognised work-based qualification, which proves that your employees’ work meets a national standard. A fully trained assessor, who is an expert in their field, will visit your workplace to conduct the training with a small group of employees. This usually takes the form of workshops and individual assessments/observations, which last for a few hours once a fortnight over the course of 6-9 months.
It provides employees with the opportunity to develop a range of skills, such as how to prepare, cook and finish off simple dishes, how to choose the right quality and quantity of ingredients and how to maintain hygienic best practice in the kitchen.
Candidates must complete 3 mandatory units and a combination of 8 optional units:
Mandatory units:
- Maintain a safe, hygienic and secure working environment
- Contribute to effective teamwork
- Maintain food safety when storing, preparing and cooking food
- Examples from a range of optional units:
- Cook and finish basic meat dishes
- Cook-chill
- Prepare, cook and finish basic pasta dishes
- Prepare, cook and finish hot and cold desserts
- Prepare and present food for cold presentation
- Supervise the work of staff
- Maintain and deal with payments
- Complete kitchen documentation
