This qualification is based on the National Occupational Standards developed by People 1st, the sector skills council for Hospitality and Catering, and as such reflects the needs of employers within the industry.
Course Units NVQ Level 2 Food Processing & Cooking Course Content:
Candidates must complete all units from Group A and eight optional units with a minimum of four from Group B and a minimum of three from Group C, of these a maximum of three Level 1 units allowed.
A - Mandatory
· Maintain a safe, hygienic and secure working environment
· Contribute to effective teamwork
· Maintain food safety when storing, preparing and cooking food
B - Optional - Group A e.g.:
· Prepare hot and cold sandwiches
· Cook and finish basic fish dishes
· Cook-chill food and Cook-freeze food
· Prepare, cook and finish basic pastry products or cakes, sponges and scones or hot and cold desserts or pasta dishes or pulse dishes or egg dishes or bread and dough products
· Process, cook, finish and present flour dough and tray-bake products
C - Optional - Group B e.g.:
Provide a counter/takeaway service Maintain and deal with payments Package food for delivery
Order stock Complete kitchen documentation Set up and close kitchen
Supervise the Work of Staff
