Course programme

To gain entry to the course you should have a suitable level 2 qualification. These include, 4 GCSE at grade A-C or a level 2 NVQ.


During year one of the course you will study the production of a wide range of products including fruit and vegetable products, dairy products (cheese, cream, butter, yogurt and so on) and bakery products. You will also study how to produce these foods safely, which will include microbiology and food safety issues. Since we aim to be able to sell some of our produce you will learn about food labelling and packaging. In year one you will also study the underpinning science behind food manufacturing.


In the second year of the course you will get the opportunity to learn about the production of meat and fish products which will give you a breadth of knowledge across the wider food sector. You will also learn how to develop new products and will undertake a project linked to this, which may well be driven by one of our partner businesses. During this second year you will learn some of the key management techniques so that you should be able to work at supervisor level and may work with year one students to supervise their work.


Throughout the course you will produce foods in our fantastic, registered food processing unit, where you will learn the importance of working to food industry standards. You will also have the chance to visit a wide range of local food businesses to see how what you are learning is put into practise commercially. Our friendly team of staff will help you develop your study skills so that you can achieve a high level if you choose. This will also enable you to progress onto the Foundation Degree in Food Studies offered here at Duchy College.
