Regulation 852/2004 states that the proprietor of a food business shall
ensure that all food handlers engaged in the food business are trained in
food hygiene matters commensurate with their work activities. Holders of
this qualification will have a knowledge and understanding of; the
importance of food hygiene, associated food hazards, good hygiene practice
and controls based upon based upon an awareness of food safety management
systems.
There is no recommended prior learning for this
course, and is suitable for all food handlers.
Suggested further
development would be to Food safety level 3 in either Retail, Catering or
Manufacturing.
The foundation certificate in food hygiene
ensures that food handlers who complete the course are trained and able
