About this course

You will need 4 GCSEs at grade D or above including English, or successful completion of a Level 1 course with key skills. There will also be a skills test for those learners wanting to fast track on to Level 2 in their first year rather than completing the level 1 programme first. The course is open to all ages especially adults who have acquired skills in the workplace.

Is the course for me?
The main aim of the course is to provide skills in food preparation and cooking to enable a student to work as a chef in a hospitality business, whether it is in a hotel, restaurant or other catering outlet. It will also give an insight in to the Catering and Hospitality Industry and the wide ranging opportunities available, together with gaining other skills which are required to be successful. It is a two year programme where a level 1 programme is fast tracked over 6 months to assist in the building of skills and knowledge before commencing on the Level 2 programme.

What will I learn?
The course has both practical and theory based elements which include the preparation and cooking of Meat, Fish, Poultry, Vegetables, Soups, Stocks and Sauces as well as food safety, hygiene and teamwork. You will train in the college's new kitchens as well having theory lessons to underpin what is learnt in the practical classes. You will also complement these Chef skills with 'front of house skills' by serving customers in Buckley's Restaurant & Bar. You complete 9 qualifications in total over the 2 years: NVQ Level 1 in Food Preparation and Cooking; NVQ Level 2 in Food Preparation and Cooking; Btec Introductory Certificate in Hospitality; Btec First Certificate in Hospitality; Level 2 Food Safety Award. Key Skills in Application of Number, IT, Communication and Working with Others. You will need to buy 2 full chef's uniforms, safety shoes, knives and restaurant jacket. at an approximate cost of £180.00.

How will I be assessed?
Your competence will be assessed by observation from course tutors in both college and on your work placement. You will complete a portfolio of evidence and undertake on-line unit testing. You will also complete some written assignments on your investigations into the industry and on your work serving customers in Buckley's Restaurant.

What can I do after the course?
There are good job prospects in a kitchen environment at junior/commis level. You can also progress onto a Level 3 programme, either in Advanced Craft Skills or Supervision.
