Course Description
This course is designed to provide you with the knowledge and skills necessary to succeed on the Professional Cookery NVQ Level 3 and to prepare you for entrance to university or a rewarding career in the hospitality and catering industry.

Course Structure
The course is made up of 16 units, of which 3 are mandatory

Areas covered by the course include:
  • Health and food safety
  • Teamwork
  • Prepare and cook fish, meat and poultry dishes
  • Prepare and vegetable dishes
  • Prepare and cook soups
  • Prepare and cook a range of hot and cold desserts


Course Assessment
The course is assessed through a portfolio, which will include practical assessments, questions and answers, workbooks and evidence collected on work placement.

Course Entry Requirements
A NVQ Level 1 Professional Cookery qualification is desired. Also it is suggested that successful candidates enrolling onto this course have, or try to gain part time employment within the industry

Course Costs
There are no course fees if you are under 19 years old on 31 August 2010. However, you may have to pay for textbooks, personal kits, uniforms, trips and personal stationery. You will be informed of these at your interview.

Course Enrichment
Activities such as trips and visits will be arranged, which are beneficial to this course and your learning. These activities are optional and additional fees will be charged to you. Details will be provided at the time of interview.

During your year at college you will have the opportunity to access various enrichment activities such as visits out into the industry, trips abroad, day trips within the UK and working on special events. You will also have the opportunity to complete a work placement within the Hospitality and Catering Industry.
