About this course

You will need a good level of written and spoken English, as you will be building a portfolio of evidence and completing on-line tests. It would also be advantageous if students have gained some experience of the catering industry however, this is not a pre-requisite.

Fee Information: The College charges a range of fees, primarily Home and Overseas. Under 19s assessed as Home, do not pay the course fees, we only charge a 20 enrolment fee which is refunded if you complete the course. Home students over 19 undertaking their First Full Level 2 (equivalent to 5 GCSE A-C) or their First Full Level 3 (equivalent to BTEC National or 2 ALevels) will be charged 20 enrolment fee plus any examination fees. For Home students over 19 receiving certain state benefits, the 20 enrolment is charged and not refundable. In all other instances, you will be charged the Home-EU or Overseas Fee.

About the course:
This programme offers students the opportunity of increasing their English skills and working and learning about the industy. Within our state of the art kitchen you will learn how to prepare and cook a wide variety of meats, vegetables, pasta and rice. You will work in our Pastry kitchen preparing bread rolls, cakes, bavarois and tarts which are then served to our important customers in the TASTE restaurant. You will be taught in the restaurant professional service skills which will help when you work in restraurants outside the college as well as functions within the college.
This programme is popular with all students as we have experienced professional lectureres in addition to well know kitchens and restaurant. To ensure that students have the underpinning knowledge of the subjects students are supported with our interactive learning web which has been specially designed to make studying easier and more exciting. Logging on, you will find a wealth of information about catering aimed at helping you make the best use of your time at college. Students are able to access study guides, demonstrations, timetable information and class email groups.
The College Learning Centres have an excellent range of facilities and provide all the information you need for your studies. There is a mix of traditional learning facilities such as books, videos, magazines and newspapers as well as access to a wide range of on-line resources. Each learning centre has facilities for group work as well as quiet study areas.
The college offers first-class tutorial and welfare services to provide support and guidance whenever it is needed.

WHY SHOULD YOU TAKE THIS QUALIFICATION?
NVQs are work related qualifications. They reflect the skills and knowledge needed to do a job effectively and show that a candidate is competent in the units that they have achieved.

COURSE DETAILS
Mode of attendance - 3/4 days a week 9.30-4
The subjects taught and assessed are:
  • Maintaining a safe, hygienic and secure working environment and ensuring that food is safe when storing, preparing and cooking it.
  • Effective teamwork
  • Preparing vegetables
  • Preparing and finish salad and fruit dishes
  • Preparing pasta and rice
  • Preparing and cooking meat and poultry
  • Preparing and cooking bread and dough products
  • Customer care
  • Preparing and clearing the restaurant ( TASTE)
  • Providing a table service
Learners will need to purchase their own chefs whites, knives and restaurant uniform. Dependant on circumstances learners maybe able to seek help to fund these items.

Assessment:
The course is assessed through completion of formal practical assessments which are logged in a work book. In addition learners will be tested on their knowledge using multiple-choice questions for each unit which are completed on-line. Students will be able to do practice tests first for each unit.

After the course:
Successful students who achieve may then continue onto the NVQ level 2 programme. Alternatively you may seek employment within the Hospitality Industry front or back of house.
