Course Features

Practical activities form a large part of the course and the college's training restaurants and kitchen provide the environment for this

Students have the opportunity to gain several other certificates such as HACCP and Selling Skills..

Student?s have to work on a rota basis to cover evening sessions in the training restaurant.

At the same time as studying for their NVQ candidates will follow a programme of basic or key skills.

All learners have to purchase uniform and knife set which will cost approximately #270.00

NVQ's assess practical performance and a person?s ability to perform a job role as well as providing knowledge.
Career Prospects and Progression

Successful candidates have the opportunity to progress to level 3 NVQ's in hospitality or enter employment in a range of organisations from restaurants to hotels, to public houses and fast food outlets.

Modules

There are four compulsory units. Maintain a safe hygienic and secure working environment Contribute to effective team work Maintain food safety when storing, preparing ? cooking food Give customers a positive impression of yourself and your organisation. Additional units examples of which include: Prepare ? Clear areas for table service Provide a buffet/carvery service Serve food at the table Cook ? finish basic fish dishes Cook ? finish basic meat dishes Prepare cook and finish basic hot sauces Prepare cook and finish basic pastry products Prepare cook and finish basic pasta Prepare cook and finish basic bread ? dough products

Method of Assessment

Students are continually assessed whilst performing practical activities at a competent level. Each unit is also assessed using computer based knowledge tests.

Course Length

The usual time taken to complete the programme is one year. More able students can add extra units to enhance their portfolio if they progress quickly. Please note that students will be expected to attend college one late evening per week on a regular basis as part of their training.
