PROGRAMME CONTENT/STRUCTURE
The course is made up of a variety of units. The generic units are:

Applying workplace skills

The practical units are:
Stock, soups and sauces
Prepare and cook fruit and vegetables
Prepare and cook meat and offal
Prepare and cook poultry
Prepare and cook fish and shellfish
Prepare and cook rice pasta grains and egg dishes
Prepare and cook desserts and puddings
Prepare and cook bakery products.

The learner will also study for a Level 2 VRQ in Professional Food and Beverage Service in the College restaurant CHEF'S.
PROGRESSION/CAREERS OPPORTUNITIES
On completion of this qualification the learner can progress to a Level 3 Professional Cookery course if they achieve merit or distinction or can move to employment in the industry.
ASSESSMENT STRUCTURE Regular assessment testing and time constrained synoptic tests.
EXCURSIONS / WORK EXPERIENCE Work experience linked to the units of the course.
