The HNC Professional Cookery course is designed to allow students to fulfil their potential, by developing excellent culinary skills. Students participate in a range of internal and external catering events, to allow them to perform in a real working situation.
This course is designed to give you a combination of culinary expertise and managerial skills. Containing practical and theory units, it covers food and drink management, kitchen planning, food production processes and licensing law, as well as providing practical experience of life in the hospitality industry.

Course programme
Key hospitality and business skills are developed through units such as Hospitality Financial and Control Systems, Hospitality Supervision, Professional Cookery Graded Unit. Practical skills are developed in the training kitchen and in working on catering for a range of internal and external functions.
How Will I LearnLearning takes place in the campus’s training kitchen, bakery and restaurant. Students are encouraged to take part in competitions and to participate in external food-related activities, such as the Food Fife Network, Scotland Food and Drink Excellence Awards and The Good Food Show.
Progression OpportunitiesUpon successful completion of this course, students can progress to the HND in Professional Cookery at other institutions or to employment in all sectors of hospitality and catering.
