This introductory professional cookery course is made up of eight core units with two additional restaurant and bar services units. The course content will help you develop basic culinary skills which can be further expanded with the completion of a Level 2 qualification.
During the course you will be able to prepare and cook a range of commodities. The theoretical units provide a broad understanding
of all aspects of kitchen operations, essential for those aspiring to work in the industry.
The core units are:
· Introduction to catering and hospitality
· Health and safety awareness and hospitality industry
· Introduction to healthier foods and special diets
· Introduction to kitchen equipment
· Introduction to personal workplace skills
· Preparation and cooking food by boiling, poaching and steaming
· Prepare and cook food by stewing and braising
· Prepare and cook food by baking roasting and grilling
· Prepare and cook food by deep frying and shallow frying
· Regeneration of pre-prepared food
· Cold food preparation
· Food safety in catering.
The optional units are selected by the College and may include:
· Bar service
· Table service.
You can also gain additional qualifications alongside your main
course, including Functional Skills as well as more specialist awards
relevant to your subject.
How will I be assessed?
Each unit is assessed by a combination of externally set assignments and online multiple choice tests. Craft units are assessed by a series of practical assessments covering the range of different commodities.

On successful completion you may:
Progress to the NVQ Level 2 in Professional Cookery or the Level 2 Diploma in Professional Cookery. Many students decide to combine further study with employment through the Advanced Apprenticeship programme. See page 26 for further details.
