The qualification cover the following areas:
Legislation
Food safety hazards
Temperature control
Refrigeration, chilling and cold holding
Cooking, hot holding and reheating
Food handling
Principles of safe food storage
Cleaning
Food premises and equipment
There is an examination at the end of the course which is externally marked. Accrediation is through Highfield Awarding body. Please note that students must successfully complete and pass the external examination to gain certifcation for this level 2 award
