The CIEH Level 2 Award in Food Safety in Catering covers the following subjects:
• Introduction to Food Safety.

• Food Safety Hazards.
• Taking Temperatures.
• Refrigeration, Chilling and Cold Holding of Foods.
• Cooking, Hot Holding and Re-heating of Foods.
• Food Handlers.
• Principles of Safe Storage.
• Cleaning.
• Food Premises and Equipment.

Assessment Method

The examination for the Level 2 Award in Food Safety in Catering consists of 30 multiple-choice questions to be answered in 60 minutes. In order to pass the examination candidates must answer 20 questions out of the 30 correctly.
