Description Breakdown:
The course involves catering industry-related assignments designed to cover a broad range of topics, together with practical skills development.
Topics include meat, poultry, fish, shellfish, soups, stocks, sauces, pastry, hot and cold deserts, buffet and presentation. You will cover the practical aspects of customer care within the College restaurant. Self study time will be required for research and completion of course work.

Trips Residentials: The course consists of assignments, short written theory tests. Practical assessments are carried out in test conditions at pre set times. The course runs over 4 days and includes one restaurant session.
