2. Course description The content of the course depends on which route you follow. Units could include: • Cook and finish complex poultry dishes • Cook and finish complex shellfish dishes • Provide Leadership for your team • Supervise food services You will also be completing Functional Skills exams in Maths and English (if you have taken GCSEs within the last 5 years, you may be exempt from this). Progress reports will be completed and given to your employer by your tutor.

3. Entry requirements You will need to have 4 GCSEs grade A* - D (preferably in Maths and English). You must be in employment in the field you wish to study for a minimum of 30 hours per week. 4. Equipment required No equipment required 5. Assessment method Your full commitment to the Apprenticeship is essential. It is important you take ownership for your own learning by seeking out opportunities to gain new skills on the job with your employer. Tutors are on hand to guide and support you with your training. You will build a portfolio of work and have on-site visits by your assessor to observe your ability and skills in your daily role.
