About this course

Candidates will normally be expected to already, or intend to, work in a supervisory role in the catering or hospitality industries.
Candidates should have successfully completed Level 2 Award in Food Safety in Catering.

Dr Andy Bowles

Food Law Advisor

Dr Andy Bowles is currently a Director and Food Law Advisor for ABC Food Law, a firm of solicitors which specialise in food law. Andy was formerly a lecturer at Middlesex University where he specialised in food law at both undergraduate and post graduate levels. Prior to this Andy was Acting Head of Environmental Health at the London Borough of Enfield and gained industry experience as a Quality Assurance Manager for Dairy Crest Dairies. Andy is qualified with a BSc (Hons) Environmental Health, BSc (Hons) Life Sciences, MSc Microbiology, Graduate Diploma in Law and PhD in food law.

Course programme

This qualification is ideal for anyone working as a supervisor, team leader or line manager in the catering and hospitality industry. Subjects covered include microbiology, hazards and controls, food poisoning, personal hygiene, premises and equipment, cleaning and disinfection, pest management, food safety management, supervisory management, legislation and enforcement.

The programme provides guidance on the main dutires of supervisors in the appropriate implementation of food safety procedures to ensure compliance with legislation.

The course is delivered by Dr Andy Bowles who has over 30 years experience in the food industry, enforcement and education.
The course fee includes lunch, refreshments and course notes.
The course is taught in small groups (maximum 8 students) to maximise the level of tutor support.
