How to maintain high standards of hygiene. food premises and equipment. microbial, chemical, physical and allergic food hazards. Hazard analysis critical control points. evaluation of food hygiene practices. inducting and training more junior staff. Suitable for: This course is aimed at those who take responsiblity for food safety (ie those who would be expected to take corrective action). It's ideal for senior kitchen staff, kitchen managers, those who train more junior staff and those who hold the Level 2 qualification and are seeking to progress in their career.
