Most butchers work in retail. This could be in a high street butcher's shop or on the meat counter in a supermarket. The job is a mixture of product preparation and customer service.
Butchers also work in wholesale. In this part of the industry the butcher deals with the carcasses that arrive from abattoirs, preparing and storing the meat before it is sent on to retailers or wholesale customers (such as hotels and restaurants).

Course programme

In order to achieve a full Apprenticeship you must successfully complete the different parts of the framework over 20 months. This consists of sector related industry qualifications: Competence and Knowledge qualification FDQ Level 2 Certificate for Proficiency in Meat and Poultry Industry Skills Mandatory Units Understand how to carry out primal butchery of red meat in sales operations Understand how to maintain workplace food safety standards in operations Understand how to maintain workplace health and safety standards in food operations Carry out secondary butchery of red meat in sales operations Maintain workplace health & safety in food operations Sharpen cutting tools for use in food operations Maintain workplace food safety standards in operations Carry out primal butchery of red meat in sales operations Sell food products in a retail environment Display meat and meat products in sales operations Principles of butchery Principles of technology in meat processing Principles of HACCP based food safety systems Produce portioned controlled raw meat products Functional Skills qualifications Level 1 Functional Skill in English Level 1 Functional Skill in Maths Employment Rights and Responsibilities Personal Learning and Thinking Skills Apprenticeships give you the opportunity to work for a real employer, earn a real salary and gain a real qualification whilst gaining valuable workplace skills and experience. One day a week is spent in college (Printworks campus) learning the theory and basis of application in a supportive learning environment. For the rest of the week they will have paid employment within a butchery establishment.
