Successful applicants will need to have an NVQ 1 in Hospitality or previous experience up to 12 months in the Hospitality industry or 4 GCSEs at grade D or better, be well motivated and passionate about the industry.

WHO IS THE COURSE FOR?
The course is for people who want to pursue their careers in the catering industry and will be able to make choices, with the necessary qualifications to support those choices. The course will cover both front of house theory and kitchen skills, and will run for 1 year.

WHAT WILL I LEARN?
The course will cover the following:

Kitchen food preparation, for fish, meat, poultry, hot and cold sweets, soups, sauces, vegetables, eggs and pasta.

A variety of cooking methods to include, steaming, poaching, grilling, baking, roasting, stewing and others.

Health and Safety laws, legal requirements and codes of practise.

Correct storage procedures.

Restaurant lay-up.

Restaurant food and drink service.

Restaurant reception.

Teamwork and effective working relationships.

Silver service among other styles of service.

HOW WILL I LEARN?
The Isle of Wight College is in the top 10% of the country for good teaching and learning. You will work in a realistic environment, preparing and cooking food for our restaurant which is open to the general public, we also take on outside functions such as weddings, private dinners, international bird fayre, Glastonbury and others; we cook a variety of dishes to broaden our learner's repertoire of knowledge using carvery menu's as well as traditional English and European. You will also serve food and drink in our restaurant, work on reception and deal with the general public face to face. There will also be an opportunity to work in the industry in a placement for 1 week during the course, so you can experience at 1st hand what the Hospitality industry really has to offer.

Some lessons will also cover menu planning, costing, food ordering, and running a practical session, to encourage taking responsibility and work your supervisory skills. You will also be expected to study in your own time, and you will be encouraged to watch cooking programmes cook at home and take on a part-time job evenings, weekends and during the college holidays.

WHAT CAN THIS COURSE LEAD TO?
Progression onto level 3, or full-time employment, and it will enable you to make a decision as to what area of the Hospitality industry you might like to take, be it front of house or as a chef or even management. Some of our successful learner's are running their own businesses, some are working abroad, some are working on the mainland or at sea, you will be able to make the choice that suits you.
