Course Content: The course allows you to choose specific areas to specialise in, providing you with an excellent foundation for your career within the catering industry. These are practical full-time courses which offer you a selection of options. You will gain valuable experience through observing and working in Reflections, a restaurant belonging to the college, situated on site and open to the public.
If you are hoping to pursue a career in the kitchen, you will learn about cooking and culinary art and culinary techniques from around the world. You will also learn and develop Basic Food Hygiene and Health and Safety in the kitchen.
Working in a realistic environment, you will be assessed on a continuous basis through completing a variety of practical and written assignments throughout the course.
These are full time courses and contain a selection of options. Students choose to specialise in a particular area - for example in food preparation and cooking and service. Students wishing to pursue a career in the kitchen will learn about cooking and culinary art culinary techniques from around the world learning and developing culinary skills Health and safety in the Kitchen and Basic Food Hygiene.
Course Format: Students study through a combination of practical experience and theory attainment is achieved by the process of assessment.
Progression: It may be possible for you to progress through to Level 3 before progressing on to work within the hospitality industry.
