Entry RequirementsThis qualification is intended for Patissiers, Pastry Cooks and other people who will be responsible for preparing sweets in baking or catering establishments.
A good standard of general education will be required and a keen and enthusiastic approach to this subject.Course Content
The course is "Unit" based and the students will gain the ability to recognise and use the ingredients, materials and equipment, used at an elementary level to produce pastry, confectionery and bakery items.
A knowledge of the Law relating to Health, Hygiene and Safety will also be gained.
How will I be assessed?
The course is made up of Six Mandatory Units for which on going assessments will be required. In addition to this a portfolio will be developed and an examination which is written at the end of the year.
Assessment will be through observation and competence recorded for each of the practical units.
What can I do next?
The qualification provides underpinning knowledge, understanding and enhancement for candidates pursuing or wishing to pursue an NVQ 2/3 or similar, in Hospitality, Catering or Bakery.
In addition to this the Level 3 Diploma for Pastry Chefs and Patissiers would also be a next step.
