Course Description
This is a day release, advanced practical training course for people who are working in a professional kitchen environment. The training programme develops comprehensive skills and knowledge to a high level suitable for professional kitchen. The course is made up of a series of practical and theory based units, which include the following depending on which department you work in:
Health & safety including food safety and safe environment
Food preparation & cookery
Preparing & cooking dishes in meat, fish, pasta and vegetables
Contributing to the work of a team
Hospitality legislation
Rotas
Food costing & control
Kitchen administration.
