Course Description:
To prepare students to meet the needs of leaders/advanced craft practitioners in this fast-changing and wide ranging industry, in a practical and focused way.

Content

  • Establish and develop positive working relationships in hospitality.
  • Maintain the health, hygiene, safety and security of the working environment.
  • Maintain food safety when storing, preparing and cooking.
  • Prepare, cook and finish complex fish dishes.
  • Prepare, cook and finish complex meat dishes.
  • Prepare, cook and finish complex poultry dishes.
  • Cook and finish complex vegetable dishes.
  • Prepare, cook and finish complex hot sauces.
  • Prepare, cook and finish dressings and cold sauces.


Plus an additional 4 units.

Entry Requirements:
Prospective candidates should also hold GCSEs in three subjects of which two would ideally be English, Maths and/or Information Technology at grade C or above, or the key skills equivalents.

Assessment and Progression:
Assessment takes place throughout the course. Competency in practical tasks and knowledge is assessed through observation of practical activity, written and oral questioning.

Progression
Employment within the hospitality and catering industry or higher level qualifications such as NVQ 4, HND in Business and Hospitality, Foundation Degree and Degree.

Duration:
This course is available as a full-time or part-time programme lasting one year.
