Professional Cookery City and Guilds Diploma Level 2
The qualification is aimed at those who have achieved at least a Silver level qualification and who have some experience within the Hospitality Industry. This course is ideal for those chefs who wish to develop further skills and increase their knowledge of the subject area.

The course covers food safety, health and safety, special diets, kitchen operations and menu planning, workplace skills, preparation and cooking of stocks, soups, sauces, shellfish, fish, meats and offal, rice dishes, pastas, desserts, puddings and bakery products.

This course includes a practical exam and written tests in short answer form.
