What's it all about?:
Our three in one course (one year, one level) means we can offer you teaching consistency as you progress from most essential catering skills through to those particular skills of management. You will get lots of practice working in our purpose-built teaching kitchens and in our publicly attended restaurant and brasserie, so you will also get a rich and rewarding experience of fine dining and faster food services.

Progression:
You can progress from NVQ level 1 through to level 3 and then on to a foundation degree in hospitality. On successful completion of this course you have a further option of spending a year in Europe through the Leonardo programme, or seeking employment in the industry.

Entry Requirements:
In our experience in order to be successful on this course you will need one of the following:
• four GCSEs at grades D-F (including English and maths)
• a BTEC foundation diploma
• an NVQ Level 1/technical certificate
• successful completion of the Gateway/Newstart course
• successful completion of the E2E/Prince†s Trust course
• equivalent qualifications or relevant work experience.

What does the course involve?:

This course aims to develop your skills, knowledge and expertise in the main craft areas of food production and food service in preparation for a career in the hotel, catering and hospitality industry.

The main subjects taught include:
• food preparation and cookery
• food service
• purchasing, costing and control
• health and safety
• kitchen hygiene
• information technology
• commodities and food handling
• wines, spirits and bar work.

The course focuses mainly on the practical aspects in commercial kitchens and restaurants where food is served to paying members of the public. We offer a comprehensive choice of pathways between one to three years to help achieve your goals. You will develop practical skills in modern and classical food and service in our restaurant and brasserie.

You will be continually assessed on all practical skills in a realistic working environment and through written assignments.
