Course programme
This course is based in our professional kitchens where you will provide first class customer service and hospitality in a realistic working environment at the world-renowned international cricket ground at Trent Bridge.
You will look at different food commodities and cookery approaches, including larder and pastry skills, health and safety; due diligence of food safety laws; all used in hospitality.
Units include advanced techniques in:
- Meat and poultry
- Fish and basic shellfish
- Pastry and dough
You will also train in front of house and achieve a Level 2 qualification alongside your course.
You will be given opportunities to work with a variety of ingredients and equipment in order to learn the skills needed to produce food in a commercial environment.
On this course, you'll get a combination of practical training, theory sessions, lectures and demonstrations. You'll be supervised by our highly experienced hospitality professionals.
Your progress and achievements will be continuously assessed throughout the course in a variety of ways, including observation, assignments, practical and written tests. You'll also need to do extra study and homework to get the most out of this course.
The hospitality business is all about making sure that people have the best experience possible when they visit a restaurant, bar, hotel or any other Hospitality business. If you are customer- focused and have the energy and drive to work in the exciting Hospitality industry this Level 1 Diploma will suit you.
English and maths are an essential part of your studies and will help you succeed on your course. These subjects help you develop confidence and are key employability skills that recruiting employers look for. If you have not achieved GCSE grade C or above in English and Maths you will need to continue studying these subjects. We will ensure you have the right lessons and support to improve your English and maths.

Therefore as part of your course there will be employability and study skills (we call these PD Central) that are included to meet your needs and those of the industry you want your career in.
