Who is this course for? This course is for those who love food and will enjoy the practical daily challenge of working in an exciting industry. The aim of this programme is to enable learners to attain more sophisticated craft skills. Advanced culinary techniques will be taught through lively practical demonstrations and hands on experience. Learners will be given the opportunity to practice their skills in well resourced professional kitchens and restaurant facilities.
Previous knowledge required: Candidates should be able to demonstrate at least one of the following criteria: - NVQ Level 2 in Food Preparation and Cooking or Food Service VRQ Level 2 Diploma in Proessional Cookery Relevant industrial experience All aplicants will required to attend an initial interview NB: Applications from mature students, those working in the industry or those wishing to return to a hospitality related environment are particularly welcomed.
What will I study? Advanced Culinary Skills in one of the following areas: 1 Food Preparation and Cooking (General) 2 Kitchen and Larder Work 3 Patisserie and Confectionery
What else will I do? A unique feature of this course is the way it is directly related to the hospitality industry. Excellent opportunities exist for assessment in both our busy college restaurants and the workplace. Real live situations form the basis of discussions with your peers and tutors. There is a continual drive to improve quality and performance. You will have the opportunity to achieve a variety of subsidiary awards including key skills. This qualification may be incorporated into a modern apprenticeship.
How will I be assessed? There will be a combination of practical assessment and assignments across the year. Many of the assessments are conducted 'live' whist working in the college's restaurant or kitchens
What will I achieve? City and Guilds NVQ Level 3 Professional Cookery together with a CIEH L2 Award in Food Safety, HSE Emergency First Aid Certificate and a range of key skills at level 2 and/or 3.
What can I do afterwards? Excellent progression opportunities are available for successful learners. The college has a superb record in supporting people into their first jobs. Past students have gained employment in Michelin starred hotels and restaurants, cruise liners like the QE2 and many other professional environments. For those who have what it takes, they can expect excellent rates of pay and good working conditions.
Materials required: You will need to buy two sets of chefs whites, restaurant uniform, knife set and two text books.
