2. Course description Summary: If you would like a career in any sector of the catering, hospitality and tourism industry, this course is for you. Course description: Most of the learning on this course takes place through active involvement in food preparation, cookery and service workshops, supported by enthusiastic and skilled members of staff. Some of your work will be in the classroom where you will learn the essential theory needed for all your certificates, including communications and literacy. As well as the Level 2 qualification, you can also gain other qualifications on this course, including Level 2 in Food and Beverage Service and the Certificate in Food Safety. You will have the opportunity to work in one of our two restaurants, undertake additional work experience and participate in external events such as the Norfolk in Harmony Restaurant at the Royal Norfolk Show. We also have excellent links with local and regional employers. Objective: It will give you the skills and knowledge you need to work with minimum supervision and a recognised qualification when you successfully complete the course. Assessment: This course is broken down into practical and theory based units. The theory units are assessed by the completion of assignments requiring personal research. Practical units are assessed by short answer questions for knowledge and, for practical skills, a series of tests in both pastry and kitchen and larder disciplines.
