About this course

You will need a minimum of 4 GCSEs (D or above) including Maths and English OR successful completion of a Level 1 course (with key skills) . The course is open to all ages especially adults who have acquired skills in the workplace. You will need to buy 2 full chef's uniforms, safety shoes, knives and a text book at an approximate cost of £150.00.

Is the course for me?
This professional chef programme focuses on developing a broad range of culinary skills. You will also learn all about the different areas of hospitality by completing six assignments; e.g. kitchen operations, cost and menu planning. These will help you develop your skills and knowledge to help you get the most out of working in this industry. The course is 1 year, full time. You will achieve: VRQ Level 2 Diploma in Professional Cookery. (Pass, credit or Distinction) Level 2 Award in Food Safety in Catering, Level 2 Certificate in Employability Skills, Key Skills.

What will I learn?
The course has both practical and theory based elements which include the preparation and cooking of meat, fish, poultry, vegetables, soups, stocks and sauces and bakery as well as food safety, hygiene and healthy eating. You will train in the college's new kitchens as well having theory lessons to underpin what is learnt in the practical classes. You will carry out assignments relating to a unit you have been studying, this will involve: * Demonstrating your subject knowledge * Showing the skills you have acquired. The assignments are an assessment and are graded and you can be awarded a pass, credit or distinction depending on how well you perform. To complete the assignment work for a whole unit successfully you will need to achieve at least a pass in all tasks. As well as assignments you will be assessed in practical tests some will be a single dish while others will comprise of a number of dishes (These also are graded with pass, credit or distinction).

How will I be assessed?
This qualification is assessed in a number of ways to provide a clear indication of candidate knowledge and abilities, the types of assessment used are: * Research assignments * GOLA tests * Short answer questions * Individual practical tests * Synoptic practical assessments.

What can I do after the course?
There are good job prospects in a kitchen environment at junior/commis level. You can progress onto a Level 3 Diploma, either in Advanced Craft Skills or Supervision.
